Crispy Fried Streaky Pork
To make pork crispy outside and tender insider, we blanch and stew the pork in seasoned sauce, then coat with egg liquid before frying. The pork is really soft, chewy, and juicy after frying.

Tips
- Blanch the streaky pork before stewing. It can remove the blood and bad taste.
- Use bone soup to stew streaky pork to make the taste better.
- Before frying, coat streaky pork with egg liquid to make it crispy. But prevent overcooking or it will be burnt.

Steps
5 minutes | Wash and cut ginger into slices. Mince coriander into pieces. Set aside. |
5 minutes | Wash and clean streaky pork. Cut into small pieces. Blanch into boiling water until cooked. Remove from heat, drain, and set aside. |
5 minutes | Add bone soup into the pot. Add light soy sauce, sugar, rice wine, star anise, and ginger slices. Then add streaky pork and stew for 1 hour. Remove the meat from heat and coat with starch. |
5 minutes | Beat eggs into a bowl and stir into egg liquid. Add flour powder, lard. Mix well to make it into a thin paste. Coat on streaky pork evenly. |
5 minutes | Add lard into the pot. Preheat the oil and then fry streaky pork until golden brown. Remove and drain. |
5 minutes | Cut fried pork into 3cm strips. Top with minced coriander. Serve. |
