Tips:
- Wash the shrimps and drain. If you do not drain, they would not coat with the marinade ingredients.
- It is necessary to add cornstarch and egg white when marinate. During the stir-fry, these ingredients will form a protective film on the shrimp to prevent over fried.
- Blanching the shrimps before frying. If directly fried raw shrimps and eggs, the eggs would be over-fried.
- In order to make shrimp and eggs tender, do not add seasoning while stir-frying. Add seasoning before stir-frying to shorten cooking time.

| Add a little salt to the shrimp and marinade for 5 min. Then rinse off. Drain the shrimps with kitchen paper (Make sure shrimps is drained, otherwise they cannot coat with the marinade ingredient). |
