Chinese Crayfish in Brine Recipe

Remove crayfish’s claws and gills. Do not cut the head and remove sand vein. Rinse with water until clean.

Let’s make the sauce. Use a bowl, add water, minced ginger, minced green onion, and garlic. Add a teaspoon of fennel and 3 dried red pepper. Bring to a boil, then add cooking wine, salt, and white pepper. Simmer for 10-15 minutes.

Add water to another pot and bring to a boil. Add 1/2 cooking wine, then pour into the crayfish. (DO NOT stir). Boil for 2 minutes and stir well. Then continue to boil for another 2 minutes. Remove crayfish from the water.

Put the crayfish into the sauce. Boil over medium heat for 10 minutes. Add 1/2 tablespoon chicken powder. Then remove from the heat and serve.
