Kitchen Tips

1. When blanching rice noodles, always keep an eye on the amount of water. Add water in time or the rice noodle will stick on the pot.

2. If you don’t like too hot, do not add dried red chili. Add chopped green onions and minced garlic instead.

Add water to a skillet. Bring to a boil. Blanch rice noodles until white and soft. When blanching, keep stirring the rice noodle.

Remove cooked rice noodles from hot water, rinse with cold water for 2 minutes. Then soak in cold water for 20 minutes. Drain and remove rice noodles to a bowl.

Add oil to a pot. Fry dried red chili until aromatic. Add salted radish to stir-fry to remove excess water. Add a little chili oil and mix well. Then pour on the rice noodle.

Add fried peanut, chopped coriander into the bowl. Add sesame oil, soy sauce, white sugar, chicken powder, white pepper powder and salt for seasoning. Stir well. Serve.
