Chinese Roasted Soy Sauce Chicken Recipe

Tips:

  1. Repeatedly boil chicken in soy sauce water is to prevent overcooking. It is the trick that makes chicken meat reach the highest tender level.
  2. You can add other seasonings in the boiling water if you desire. Such as the five-spice powder, white pepper and ginger slices.
  3. Rinsing in the cold water makes chicken skin tight and tender. Using ice water can achieve better results. Try it then you will know.
  4. Instead of soy sauce, You can use dark soy sauce, barbecue sauce, and even honey sauce. Trying to add creativity seasoning on traditional Chinese chicken recipe is the spirit of Chinese cuisine.

Mix soy sauce and water in a skillet. Bring to a boil.

Wash and clean the chicken. Drain. Then boil the chicken in the say sauce water. Keep stirring to make sure heat evenly.  Boil until chicken skin turns tight and yellow. Remove from water and drain.

Repeat Step 2 once. Then turn off heat and soak chicken into the soy sauce water, for 20 minutes.

Remove the chicken from skillet then rinse with cold water. Hang the chicken and pour over soy sauce water. Use an electronic fan to blow to drain.

Preheat the oven to 260℃. Roast the chicken for 30 minutes until golden brown. Serve and enjoy.
