Fried Sweetened Bean Paste Glutinous Rice Pie Recipe

This glutinous rice pie (Dou Sha Ma Zao) is a traditional Chinese snack in many places. You can smell a strong fried white sesame oil aroma even before eating. If you don’t like the bean paste, you can replace it with salty egg’s yolk, salad sauce, vegetable or even minced pork.

Tips

1. The key to this glutinous rice Pie is to control the temperature of frying. If the temperature it too high, the pie will be burnt immediately and it’s inner remains raw. If the temperature is low, the glutinous rice can absorb too much oil, so that the pie will break into pieces.

2. You can replace the beam paste with sesame paste, sweet chili sauce or any paste you like.

Add water to a pot. Add sugar into the water and bring to a boil. Add glutinous rice powder and wheat starch powder into the hot water. Stir well until cooked.

Remove the dough from hot water and place it on a cutting board. Allow to cool.

Add lard into the dough and knead until mix well and smooth.

Make the dough into a long strip.

Cut it into small doughs. Approximately 30g each.

Pat the dough until it becomes thin flat doughs. Use these flat doughs to wrap the bean paste.

Roll the dough on the sesame until fully coated with white sesame.

Add oil into a fry pot. Preheat the oil until about 150 degree. Add the dough to fry until golden brown. Serve.
