1. The key to this dish is the ratio of water and sweet potato starch, it should be 1:5. For this ratio, the paste will not be too thin or too thick.

2. The oyster is fresh, so no need to add MSG or chicken powder.

3. To have the taste,  eat while food is still hot.

Wash oyster meat and drain water. Beat eggs into a bowl and stir well to make egg liquid.

Add water to another bowl. Gradually add sweet potato starch into the bowl. Add salt for seasoning. Stir evenly to make a paste.

Add oil to a frying pan. When the oil is hot, add oyster and fry until cooked (Colour changed).

Pour the paste on the oyster. Simmer over a small fire until the paste becomes transparent. Add egg liquid from the edge of the frying pan. Sprinkle with green onions. Fry until golden brown on both sides. Enjoy!
