Wash oyster meat and drain water. Beat eggs into a bowl and stir well to make egg liquid. |

Add water to another bowl. Gradually add sweet potato starch into the bowl. Add salt for seasoning. Stir evenly to make a paste. |

Add oil to a frying pan. When the oil is hot, add oyster and fry until cooked (Colour changed). |

Pour the paste on the oyster. Simmer over a small fire until the paste becomes transparent. Add egg liquid from the edge of the frying pan. Sprinkle with green onions. Fry until golden brown on both sides. Enjoy! |
