Tips

1. In Step5, make sure knock the shrimp and starch until mix well. Starch makes shrimp as tender as the fungus.

2. You can prepare coated shrimp first, then blanch shrimp, black fungus and snow fungus together.

Soak black fungus and Snow fungus with clear water until soft. Remove pedicle, wash and tear into small pieces.

Add water to a skillet and bring to the boil. Blanch black fungus and snow fungus until cook through. Remove and drain.

Wash shrimp. Cut off the head, peel off the shell, pull out the sand vein. Cut each shrimp into two pieces from the middle.

Put shrimp into a bowl. Sprinkle a little salt and mix well with cooking wine. Marinate for 10 minutes.

Stir in kale slice, shrimp, black fungus, and snow fungus. Season with salt and chicken powder. Use another bowl, mix cornstarch and water, then pour into the pot. Simmer until soup thicken. Serve.
